Carnaroli
(Superfine Rice)
It belongs to the superfine commodity group, japonica species, and has a caryopsis (grain) with strongly pronounced surface and depth.
Carnaroli is a typical milled rice, with an inside bud visible to the naked eye, which provides high resistance when cooking. During cooking, the outer part of the grain absorbs sauce, which softens the starch within the grain keeping the rice palatable and balanced until cooked.
Large grain size and a high percentage of amylose, which guarantees low viscosity and excellent cooking characteristics, make Carnaroli perfect for cooking risotto.
