Cascine Mandria Rice
Cascine Mandria is among the few farms in Italy able to manage on its own the entire production phase, from sowing to packaging. We have all the tools and cutting-edge machinery, to ensure the quality from the agricultural phase to the industrial one, giving you the privilege of a product that comes from the earth and arrives directly on your plate.
Soil enrichment
Our production process starts here, in our land.
One of the secrets of Cascine Mandria is the use of organic manure in winter, which consists in cultivating of herbs and planting them only after they reach a certain growth. Hereby, the soil is kept covered producing and integrating at the same time organic substances indispensable for the cultivation of our product.
Sowing
To ensure the passage of air between the plants and, consequently, a healthier product, the sowing is carried out in rows. This technique also allows a greater control of the weeds, easier to locate and eradicate.
Watering
Water supply consists in keeping the soil dry or submerged under a variable layer of water.
The lands of Cascine Mandria are irrigated by unpolluted spring-waters of the channel of Rotto, so as, flowing into the spring of Re, it creates the first outlet of water to inundate all the rice fields. Besides, our innovative irrigation system formed by branch pipes, allows you to use pure spring water in every single plot, precisely because it comes directly from the irrigation ditch and does not have any intermediate steps that may affect its property.
Fertilization
Only natural and organic products of our farming are used in the fertilization of Cascine Mandria rise fields (chicken manure, manure).
Weeding
The weeds are pulled out manually.
Harvesting
The harvesting is a period lived with a great fervor and passion by all of us of Cascine Mandria. We only pick up the 16 to 18% moisture product, with fully developed and ripe rice grains, this allows the rice to dry in the fields finishing the natural cycle of maturation and gives it the full flavor that characterizes the rice of Cascine Mandria.
Drying
After harvesting, the rice is transferred to the energy-saving grain dryer to remove moisture and prepare it for further processing.
Storage
Then our rice is stored in silos.
The product is stored in a refrigerated environment at temperatures below 8°C; this natural method allows us to avoid possible natural infestations without the use of any preservative agents or pesticides.
Traditional treatment
Each batch of rice is traceable from sowing to packaging. This allows us to monitor quality control very closely. We have also decided to recover the processing techniques that the market needs have hastily set aside. The product is worked a little at a time with a slight cleaning (removal of the husk), which provides a better nutritional intake and a more intense flavor. The rice is then different from the “industrial”, with a higher yield and a better seal to the cooking. So we combine the value of tradition to the effectiveness of the technology, using machines that allow us to select the grain to grain based on color, purity and size. In this way all the small impurities are removed in a natural way and the homogeneity of the batches is guaranteed.
Packaging
To maintain the original characteristics of the rice until serving, the packaging always occurs in a vacuum or in a protective atmosphere.
Why our rice is special
In Cascine Mandria we cultivate, transform and pack our rice, we control each our product beginning from the field up to the warehouse, to ensure quality and taste in each grain.
Cascine Mandria rice is a special selection refined with a period of maturation in silos, carefully grown up by following the ancient agricultural techniques acquired by our experience and passion, produced in limited quantities and targeted at Chefs and admires of the high level cuisine.
Sowing in rows with a reduced density, the slow ripening in the fields, and a careful selection that favors only the “heart of the rice fields” plants, the innovative system of irrigation control and the traditional stone husking allows Cascine Mandria rice to boast a superior quality, therefore to have the characteristics of tangible superiority.
